The Ultimate Ramen

What is a popular quick meal of the future in LA according to Blade Runner? Ramen, of course. Hunting for the perfect ramen is now the pursuit of all hipsters.

I had ramen so good in the west of LA that I don’t want to tell the exact location for the fear the hipsters will invade and ruin the peaceful spot. The first sign that the eatery was the real thing was that the customers were mostly locals–many of whom are of Japanese descent. The true testament of how good the tonkotsu, pork bone, broth was revealed after finishing the noodle. The gelatin film forming after the soup cools is a proof that it is actually genuine, rich bone broth—the collagen has been rendered from the long-cooking process. I have noticed some places adding milk for thickness and to cut the simmering process, but it only makes the soup gooey without flavor.

This was so worth driving on the 405 for and this means something if you live in LA.
