Pig: The Unicorn of Carnivores

Forget about the forbidden fruit. What’s more sinful is the forbidden meat aka pork which is both non-kosher and non-halal. Even some Christian sects abstain from pork. It’s really, really good AF like that–offal and all.

Pork can be considered white meat but the best come from black pigs–the Berkshire, better known by the Japanese name kurobuta, and the black Iberian pig.

A lunch at the new Otium was in order after a hard day of photo session at The Broad. The dish I ordered had a top quality slab of pork belly grilled to perfection.

Something so satisfying about the cut–what Koreans call the 3-layer flesh. The skin, the fat, and the actual meat–the chewy, the juicy, and hearty. It’s like Neapolitan ice cream–you can have it all–chocolate, strawberry, and vanilla.

Homer Simpson said it best when he couldn’t believe a pig has so much to offer in so many ways:

Homer: Lisa, honey, are you saying you’ll never eat any animal again? What about bacon?

Lisa: No.

Homer: Ham?

Lisa: No.

Homer: Pork chops?

Lisa: Dad, those all come from the same animal.

Homer: Yeah, right, Lisa, a wonderful, magical animal.
