I love ice cream but there’s something differently satisfying about eating shaved ice–less cream, more ice. I love how it melts in my mouth– softly, quickly liquifying.
There’s nothing more refreshing than shaved ice with red beans for me during summer but I liked Homibing’s taro “ice flakes” because the ice is in a pile of ribbon. The feel of how it dissipates on my tongue was novel.
The dessert looks big, but it’s very light–not too sweet. A sliver of cheesecake and a dollop of milk pudding (kind of like panna cotta) perfectly balanced the fluff of ice with that signature nutty, starchy sweet potato flavor of taro.
